Waffles

Crispy on the outside, and perfectly soft on the inside, these waffles would be perfect made for your family one morning! They can be topped with any of your favorite toppings, or even made into an ice cream sandwich.

Waffles

  • 1 3/4 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/8 teaspoon fine salt
  • 1/8 teaspoon ground nutmeg
  • 1/4 cup sugar
  • 3 large eggs (room temperature, separated)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsalted butter (melted, plus more for brushing waffle iron)
  1. Preheat a waffle iron to medium-high.
  2. In a large bowl, whisk together the flour, baking powder, salt, and nutmeg.
  3. In a medium bowl, whisk together the milk, egg yolks, vanilla, and 1/4 cup melted butter. Whisk the milk mixture into the flour mixture until a batter is formed. Take care not to over mix the batter.
  4. In medium bowl, with a hand-held electric mixer or whisk, whip the egg whites until they just begin to hold a loose peak. Scatter the sugar over the whites and continue beating until they hold a soft
  5. Brush the inside surface of the iron with butter. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending upon the size of the iron. (Take into consideration that the batter will spread once the lid is closed.) Cover and cook until golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron is well seasoned or nonstick it is not necessary to brush the inner surface each time before cooking the waffles.)
  6. Serve the waffles immediately with syrup, jam, fresh fruit, or yogurt.

Banana Spring Rolls

  • 1 package spirng roll wrappers
  • 3 bananas
  • 1 tablespoon cinnamon sugar mix (to taste)
  • 1/2 cup Coconut Oil
  • 1 cup rhubarb
  • 1 cup strawberries
  • 1/2 tablespoon lemon juice
  • 1/2 cup sugar
  • 1/4 cup coconut milk
  • 1 cup water
  1. Slice bananas into thirds.
  2. In a bowl, combine coconut milk, cinnamon/sugar, and bananas. Set aside.
  3. In small sauce pan simmer rhubarb, sugar, lemon juice for 15 minutes, 10 minutes into simmer add strawberries. Cool and send through the blender. Refrigerate
  4. Take a piece of banana place in the center of wrapper and roll.
  5. Heat coconut oil in small sauté pan, pan fry until golden brown.

Apple Tart

Dough

  • 1 Cup Flour
  • 1/2 Teaspoon Sugar
  • 1/8 Teaspoon Salt
  • 6 Tablespoon Butter (Softened)
  • 3 1/2 Tablespoon Chilled Water

Filling

  • 5 Apples ((Peeled, Cored, Sliced))
  • 4 Tablespoon Butter (melted)
  • 5 Tablespoon Sugar + ½ Teaspoon Cinnamon
  • 2 Teaspoon Lemon Zest
  1. In a food processor combine flour, sugar, salt, water, and butter pulse until coarse crumble is formed.
  2. For the filling peel, core, and slice apples about ¼” thick.
  3. In a bowl toss sliced apples with sugar, cinnamon, and lemon zest
  4. Roll out tart dough into pan, trim edges.
  5. Layer apples around tart pan, brush melted butter over tart
  6. Sprinkle with sugar and place tart pan on sheet tray.
  7. Bake in the center of the oven for 45 minutes.
